Ana Roš
Chef & Owner of Hiša Franko
3 Michelin Stars
Ana Roš is one of the defining voices of contemporary gastronomy. Without formal culinary training, she forged an extraordinary path that proves passion, curiosity and a deep connection to place can redefine not only a restaurant, but an entire country’s culinary identity.
Born in Slovenia, Ana was first a competitive alpine skier before studying International and Diplomatic Sciences at the University of Trieste. Her journey eventually led her to Hiša Franko in the Soča Valley, where she took over the kitchen despite having no professional culinary education. There, she developed a cuisine shaped by nature, the changing seasons and the people who have cared for this landscape for generations.
International recognition followed with Netflix’s Chef’s Table in 2016, and a year later she was named The World’s Best Female Chef. In 2023, Hiša Franko became the first restaurant in Slovenia to earn three Michelin stars, while also receiving a Michelin Green Star for its commitment to sustainability.
At the heart of Ana’s philosophy lies the Soča Valley itself. Nature is not simply an inspiration—it is the starting point of every menu. Working closely with shepherds, cheesemakers, fishermen, hunters and foragers, she creates dishes that evolve with the rhythm of the seasons. For Ana, sustainability is not a label; it is simply the only way to cook.
Beyond Hiša Franko, Ana has expanded her vision through projects including JAZ, Pekarna Ana and Ana Roš Drinks, bringing the same values of craftsmanship, locality and creativity into new dining experiences.
At Gastrosophy Fest 2026, Ana Roš will join the conversation around The Value of Nourishment and Its Journey, sharing her perspective on the relationship between people, nature and gastronomy, and on how a sense of place can become the foundation of truly meaningful cuisine.
