For Mauro Uliassi, the relationship with food began long before it became a profession. He has been cooking for more than 50 years, yet his earliest culinary memories come from a time when becoming a chef was not even something he had imagined.

He grew up surrounded by food, hospitality and the everyday life of a coffee shop. Both of his grandmothers cooked professionally, making the sounds of kitchens and dining rooms, the aromas of food and the constant presence of guests a natural part of his world from an early age.

This early familiarity with hospitality gradually developed into a professional journey that now spans more than five decades. A defining moment came in 1990, when Mauro and his sister Catia opened Uliassi in Senigallia, in Italy’s Marche region.

The restaurant’s location is an integral part of its story: Uliassi sits between the port and the beach of Senigallia, in a place where the sea and the everyday rhythm of the town come together.

In 2018, Uliassi was awarded its third Michelin star, marking an important milestone in the journey of both Mauro and the restaurant. Since then, it has been featured in some of the most significant Italian and international gastronomic guides and rankings, including The World’s 50 Best Restaurants, The Best Chef Award, OAD, Gambero Rosso and 50 Top Italy.

Behind this international recognition lies a story that began much more simply: in family kitchens, surrounded by people who cooked professionally, and in an everyday world where food and hospitality were simply part of life.
